Mediterranean Baked Fish
A recipe for a classic Mediterranean dish that is both delicious and healthy:
- 4 (6 oz) white fish fillets (such as cod, halibut, or tilapia)
- Salt and pepper, to taste
- 1/4 cup freshly squeezed lemon juice.
- 2 cloves garlic, minced.
- 2 tbsp extra-virgin olive oil
- 1 tbsp chopped fresh oregano
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh basil
- 1/4 cup chopped Kalamata olives
- 1/4 cup diced tomatoes
- 1/4 cup crumbled feta cheese
Instructions:
Preheat the oven to 375°F (190°C). Line a baking dish with
parchment paper or aluminum foil.
Season the fish fillets with salt and pepper. Place them in
the prepared baking dish.
In a small bowl, whisk together the lemon juice, garlic,
olive oil, oregano, parsley, and basil. Pour the mixture over the fish fillets.
Sprinkle the Kalamata olives and diced tomatoes over the
fish. Top with crumbled feta cheese.
Bake the fish for 12-15 minutes, or until the fish is cooked
through and the cheese is melted.
Serve the fish hot, garnished with additional fresh herbs if
desired.
